Any idea if it is possible to run a WMC server at home where I also have a VPN server, and connect to my home VPN from a remote location and watch recordings and live TV via an xbox360 extender that is connected to my home VPN? Assuming I can get around 10mbps? (HD should be around 5mbps I think)

I had an issue with my extenders not seeing my media libraries that have been setup automatically on Windows 7 PC. The PC could see these libraries but the extender could not see my Music, Photos, Videos, and Movies. Enabling the guest account and giving it read access to the respective folders...

You could also just add the ANONYMOUS USER well known security principle to both the share and file system. More secure than enabling the guest account.

If you try to record to a NAS over a network with this it's going to give you huge headaches. Network traffic will cause your video to jitter and freeze due to inconsistency in speed. This is why MS doesn't all you to do it. (very easily, lol)
BUT, if you're running Win 7 WMC in a VM that's on top...
