Firmware Roll Back?

Is it possible to roll back to an earlier version of the echo firmware, or from the beta to a stable release?

You can do this using the recovery feature and not pressing 1 when it reboots as that will bring up the latest beta if you are on the beta channel.

I am on the latest beta though, unless a new one was released today. It would be nice to be able to revert back to a stable build.

Set your echo to the stable channel and follow this procedure to do a recovery. If it prompts to do an update of the f/w upon boot after it recovers, don't do it. Go into the settings and do a f/w update from there on the stable channel after verifying which f/w it is using.
