I had been using the Xbox 360 as an extender for about a month and had gone through and encoded my movie library to MP4s. The MP4 profile I was using worked fine on the extender and still works fine on the host machine, I use Ripbot264 for conversions. Just last week the Xbox has stopped displaying the picture when playing movies. It will play the audio, but the picture will be blank. I had tried a variety of different fixes:
Reconnected the extender
Ensured perfect communication over the network
Deleted the Mcx user on the host machine and had it be recreated
Tried different bit-rate settings for the video
Nothing seems to be making a bit of difference.
The only thing that has changed in the meantime is the weekly updates I get for the Xbox 360 beta program. While it is entirely possible there may be an issue there, I began the beta program well before the problem started occurring
Does anyone have any suggestions on how to solve this problem?

Looks like you've checked all of the basics. Maybe try clearing the Xbox system cache... http://support.xbox.com/en-US/xbox-360/ ... stem-cache

That was a good suggestion, unfortunately it didn't solve the problem.

Try uninstalling and then reinstall the optional media update?
