Fast-forward, rewind, subtitles only work on ripped DVDs

A few years ago, I ripped my DVD collection using DVD Shrink. I left them all uncompressed, in the VOB format.
This was the only way I could find in order to keep the subtitles and proper FF/Rewind functionality. (on MP4/MKV/etc, FF-ing only moves slowly, and pressing more that once does nothing).

Is there any way to retain these functions while converting to MP4/MKV/other?
