Thoughts on new setup?

Hey everyone! My current machine is eight years old with windows 8.1 and it's time to retire it. I am planning on creating a new media center machine (dell poweredge t20) with Windows 7 SP1. I have heard there are possibly issues with the latest windows updates for 7 and wmc? Any thoughts on skipping updates and just having the golden release of 7 SP1? Being in the IT industry it sounds like a super bad idea but this machine will be a headless unit and will just be used for wmc and 360 extenders. I do have the option of doing 8.1 again but it just seems like I had more issues with 8.1 Media Center.....but that could've been the age of the machine as well. Any responses would be greatly appreciated. :)

There are no issues with WMC and Windows 7. The issues happen to those running a forked version of WMC on Windows 10. The Windows 10 bi-annual feature updates break WMC.

I read that with the latest 7 security updates (however long ago that was since its eol now) has caused some issues but maybe not.
